This week, the girls gathered for a Belgian-themed dinner at CDL, transforming the dining hall into a little corner of Brussels.
The evening began with Belgium’s most iconic dish: moules-frites. Steaming bowls of mussels in a savory broth were paired with golden fries — crispy on the outside, fluffy inside — a combination that quickly became the highlight of the table.
Next came chicory gratin with Edam. The creamy béchamel and melted cheese softened the chicory’s natural bitterness, turning it into a comforting and surprisingly popular dish. To balance the richness, the cooks served braised Swiss chard, tender and earthy, adding a rustic note to the menu.
The meal ended on the sweetest note: warm Belgian waffles crowned with whipped cream and colorful jams. Strawberry, apricot, and berry preserves made every bite feel festive and indulgent.
