Sunday Brunch Before the Holidays

Today’s Sunday brunch was a bit different since it was the last one before the Christmas break. As usual, the dining hall offered a variety of breakfast and lunch options, from scrambled eggs to pastries, but there was a slightly more festive atmosphere today. It was a nice way to finish off the semester and enjoy a relaxed meal before heading home for the holidays.

It wasn’t just about the food, but also about taking a moment to appreciate the time spent together before everyone leaves. The brunch gave us a chance to catch up and enjoy a meal as a group one last time before the break. We’ll be back for more Sunday brunches in January, but for now, it’s time to enjoy the holiday season.

International Dinner Recap: Thailand

Dear Community of the Collège du Léman,

Last night’s International Dinner took us on a culinary journey to Thailand, where our dining hall was filled with the bold, savory, and aromatic flavors of Thai cuisine. The menu featured three standout dishes: Massaman Chicken, a rich and flavorful curry with tender chicken; Beef Thai Basil, a stir-fry with fresh basil and a spicy kick; and Shrimp with Vegetables in Oyster Sauce, a delicious combination of shrimp and crisp vegetables in a savory sauce. Each dish was a perfect representation of Thailand’s vibrant food culture, and the meal was a hit with students and staff alike.

For dessert, we were treated to a unique and indulgent Coconut Rice Pudding Roll, a sweet, creamy dish that combined the comforting flavors of coconut and rice in a delicate roll. The evening was filled with excitement as everyone explored new flavors, and once again, the International Dinner was a wonderful way to connect with different cultures through food. We can’t wait to see what next week’s dinner will bring!

Yesterday evening, the dining hall at our boarding school took on a distinctly Norwegian vibe as we celebrated another International Dinner. The highlight of the night was the fresh salmon, perfectly cooked to showcase its natural flavors. Alongside the fish, there were hearty, flavorful meatballs—an iconic Norwegian dish—that paired wonderfully with roasted potatoes and an assortment of fresh vegetables. The spread felt both comforting and vibrant, transporting everyone to Norway through its simple yet rich ingredients.

As the savory dishes were cleared away, the sweet finale arrived: cinnamon rolls. These warm, soft treats were a true crowd-pleaser, their rich, spiced aroma filling the room. The cinnamon rolls not only satisfied our taste buds but also brought a touch of sweetness that made the night feel special. Sharing a meal from a different culture brought a sense of unity and celebration to the evening, reminding us of the beauty in experiencing new flavors and traditions together. Last night, we came together at our dinning hall to celebrate Thanksgiving, a holiday dedicated to gratitude and togetherness. Last night, our dining hall transported us to the vibrant culinary world of Portugal with an international-themed dinner. The menu was a delicious celebration of Portuguese flavors, starting with freshly baked bread infused with smoky chorizo—crispy on the outside and soft within. For the main course, we enjoyed tender roasted chicken paired with golden, seasoned potatoes, a comforting and hearty dish that brought warmth to the chilly evening. The dining hall’s dedication to authenticity and attention to detail made every bite feel like a journey to a Portuguese family table.

To end the meal on a sweet note, we were treated to the iconic pastel de nata, Portugal’s beloved custard tart. These creamy, caramelized delights were the highlight of the evening, leaving everyone with smiles and requests for seconds. This Wednesday, our boarding school celebrated Ghanaian culture with an International Dinner that introduced students to the rich culinary traditions of this West African country. Known for its vibrant and diverse cuisine, Ghana offers a fascinating blend of flavors and ingredients that reflect the country’s history and cultural influences. One interesting aspect of Ghanaian food culture is the strong connection between meals and communal dining. In many Ghanaian households, food is often served in large, shared portions, encouraging togetherness and fostering a sense of community during mealtime.

Ghanaians also have a deep respect for food as a way of honoring tradition. For instance, certain dishes are prepared for specific occasions, like weddings or festivals, and the preparation often involves family and friends coming together to cook and share in the experience. This emphasis on unity and celebration is something we wanted to bring to life in our school’s dining hall—by not only serving traditional dishes but also creating an atmosphere of shared enjoyment and learning.
